Turkey Meatloaf with Red Pepper Sauce



This easy turkey meatloaf is a fan favourite in our house and an easy weeknight meal. It certainly isn't your typical, dry meatloaf -- the turkey is light and the red pepper sauce is an unexpected surprise that helps keep the meat moist and add flavour.


Ingredients

Meatloaf

  • 2 pounds ground turkey
  • 2 eggs
  • 1/2 small can of tomato paste
  • 1 tsp salt
  • 1/8 tsp cayenne pepper
  • 1/2 cup bread crumbs
  • 1 small onion, finely chopped
  • 2 cloves chopped garlic
Red Pepper Sauce
  • 1/2 small can of tomato paste
  • 1 small onion, roughly chopped
  • 1 clove garlic, peeled
  • 1 red pepper, seeded, cored and roughly chopped
  • 1 cup water
  • 1/2 tsp salt
  • black pepper
Directions

Preheat oven to 350 degrees

In a large mixing bowl, mix together all meatloaf ingredients.



Place mixture in a 9 x 13" pan and form mixture in a loaf about 10 inches by four inches, which will help it cook evenly throughout.



In a blender, mix all the ingredients for the sauce and puree.

Pour over meatloaf and allow excess to pool around the meatloaf.



Cover with aluminum foil and let cook for 45 minutes. Remove foil and cook for another 45 minutes.



Let rest for 15 minutes before cutting and serving.
